Imagine a soft, fluffy, chewy cookie which tastes like birthday cake and cheesecake got married, adopted a sugar cookie and lived in bliss! It’s Bea’s turn to take in snack tomorrow. That’s a big deal in her class, as she will get the coveted daily leader position! So of course we used this as a delicious opportunity to create the BEST Vanilla frosted soft sugar cookies in the world!
I knew I wanted a quick method that yielded soft, creamy, incredible cookies that did not need to be chilled, rolled, or cutout. It was already 4pm, and I needed to get this done! So with a little brainstorming, we did it! With my two sweet helpers, we created the perfect sugar cookies that were just begging to be topped with the most whipped, flavorful, heavenly vanilla buttercream there ever was. Get ready for a taste of heaven!

And when I say that, I mean the most incredible sugar cookies EVER!
The Frosting
And when I say that, I mean The ULTIMATE vanilla buttercream frosting!
The Baker
And when I say that, I of course mean the CUTEST little baker out there!
So now that you have all the components of these vanilla frosted soft sugar cookies, let’s bake!
The Cookie Dough
These vanilla frosted soft sugar cookies start out with a couple sticks of softened butter along with some softened cream cheese. Bea got this creaming with some sugar, vanilla, and eggs.
Then we slowly incorporated a flour mixture to get this dreamy, decadent dough.
We used cookie scoops to get about 1 1/2 tablespoons of dough dropped right onto our pans. We like BIG cookies.
We baked these sweet things in a 350 degree oven (3rd rack) for about 12 minutes. If you make them smaller then lower your cooking time. You want them just slightly under baked. This will give you incredibly soft cookies after they cool. Trust me, these are addictive and utterly heavenly! That dough was out of this world. If you don’t eat too much you should get a couple dozen cookies out of this!
Whipped Vanilla Frosting
While the scrumptious sugar cookies baked in the oven, we went to the work on the most divine, whipped, fluffy, vanilla buttercream frosting.
You will want to use your whisk attachment and stand mixer for this. And you’ll just whip your softened butter, powdered sugar, and extracts, adding in a bit of buttermilk to take this to nirvana.
Just look at this frosting perfection!
The real fun started when we got to decorating!
At 1 1/2 Tilly had the time of her life while making a colossal mess. These sprinkles will travel far around your house! Tip – Have an old tablecloth and your vacuum handy!
We used these adorable silicon place mats.
Vanilla Frosted Soft Sugar Cookies
Ingredients for Cookies
- 2 sticks softened butter
- 4 ounces softened full fat cream cheese
- 1 1/2 cup granulated sugar
- 2 eggs at room temperature
- 2 teaspoons pure vanilla extract
- 2.5 cups plus 2 tablespoons all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt (I prefer sea salt)
Preheat your oven to 350 degrees. In a stand mixer, with the paddle attachment, cream your butter, cream cheese, and sugar for 3 minutes. Scrape down sides and well at bottom of mixer and let run again until fully incorporated. Then add in eggs and vanilla and beat for another 2 minutes. Scrape sides then mix again to incorporate. In separate bowl mix flour, baking soda and powder, and salt- slowly incorporate into dough. Drop by tablespoons and bake for 9-12 minutes, depending on your oven. Let cool completely before frosting.
The Ultimate Vanilla Buttercream Frosting
Ingredients for Frosting
- 1 cup softened unsalted butter
- 1/4 cup softened salted
- 3 cups powdered sugar (more or less, depending on sweetness you desire)
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 -3 tablespoons buttermilk
Use stand mixer with the whisk attachment. Start whipping butter until pale. Then slowly add in powdered sugar. Next, extracts and continue to whisk for a few minutes. Add in buttermilk and whisk until fluffy.
