This Summer has been an active one, to say the least! I decided not to send the girls to summer camp this year so we could play and play some more! We have spent our days visiting everywhere St. Louis has to offer for kids, baking up a storm, and hiding under forts with our homemade Basil Lemonade to ward off the heatwave! Our latest indoor game has been pretending to go camping, so of course this led us to make the messiest S’Mores with my kitchen torch. While I love S’Mores, I knew I wanted to come up with a less messy, more portable version for our imaginary treks through the Montana wilderness. These S’Mores Cookies are gooey, salty, and sweet. They are the summer campfire cookie that will give you all you love about S’Mores in a simple snack that is sure to delight all!
Step 1:
The first step to making these S’Mores Cookies is to grind up some honey graham crackers in a Food Processor. They should be fine crumbs. If you find any lumps afterwards, just remove them. You want a full cup of graham cracker crumbs, which will come from a full sleeve of graham crackers (9 crackers).
In a bowl, whisk together all of your dry ingredients, including the graham crumbs. The base of these cookies will bring give a taste and texture of a real S’Mores treat!
Step 3:
Next, you will cream your butter and sugars for five minutes, until fluffy. You can use a Hand Mixer or a Stand Mixer with the paddle attachment. Then scrape down the bowl.
Step 4:
Next, add your eggs one at a time, beating well after each addition. Add in the vanilla extract then mix on medium speed for another 3 minutes, until whipped and fluffy.
Now gradually add in your dry ingredients. If using your stand mixer, turn the setting to “stir”. If you are using a hand mixer, just switch to a wooden spoon or spatula for the rest.
You can see the graham crumbs throughout the S’Mores Cookie Dough. The sweet smells of honey graham and cookie dough will be wafting up by now, and you know you’re in for something good! The incredible scent of the S’Mores Cookie Dough was what really got me while making these. You want to dive in and eat the whole batch even before the chocolate chips hit!
Step 6:
Then just throw in your chocolate chips or chopped chocolate bar of choice. I used dark chocolate chips since these mellow out the sweetness that the marshmallows will bring to the cookies while deepening the flavor of the brown sugar and graham crackers. Note that you should reserve 1/4 cup of chocolate chips to press onto the tops of the cookies once they are out of the oven to really give them a S’mores Cookies look! Furthermore, you can use chopped chocolate or broken up Hershey’s chocolate candy bars.
Chill!
Use a Medium Cookie Scoop to scoop these out onto your parchment or slip mat lined baking sheet. I bake 6 S’Mores Cookies per baking sheet. Then chill in your fridge for about 20 minutes. Meanwhile, get your oven preheated and your oven rack onto the second rack. If you are baking two batches at once, you will want to place on 1st and 3rd racks, but then switch them halfway though for even baking.
Bake!
When I started baking these S’Mores Cookies that warm and inviting smell radiated from the kitchen up to the girls’ rooms. They came bounding down the stairs asking, “What are you making?”. They didn’t leave the kitchen until these S’Mores Cookies were done, cooled, and served with a glass of milk!
When the S’Mores cookies are almost done baking you will press on some mini marshmallows. Then just let them bake another couple of minutes to let the marshmallows begin to puff. They will melt into the S’Mores cookies more after being removed from the oven.
After coming out of the oven you will press on a few more chocolate chips or chocolate candy bar pieces onto the tops of each S’Mores Cookie. Have fun bringing Summer camping right into your kitchen, school, or on the go!

S'Mores Cookies
S'Mores Cookies are gooey, salty, and sweet. They are the summer campfire cookie that will give you all you love about a S'More in a simple snack that is sure to delight all!
Ingredients
- 3/4 cup Butter room temperature
- 1 cup Brown Sugar
- 1/2 cup granulated sugar
- 2 eggs room temperature
- 2 tsp vanilla extract
- 1 cup graham cracker crumbs
- 2 cups AP Flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 10 oz. chocolate chips of your choice reserve 1/4 cup for tops of cookies
- 1 cup mini marshmallows
Instructions

Preheat oven to 365 degrees. Line baking sheet with parchment paper.

In a bowl, whisk all of your dry ingredients (flour, salt, baking powder and baking soda, and graham cracker crumbs).
In the bowl of your stand mixer, cream butter and sugars for 5 minutes.
Then add eggs one at a time, beating after each addition.
Add vanilla extract.
Continue to beat on medium speed for 3 minutes.
Turn mixer to "stir" setting and gradually add in dry ingredients.
Then mix in chocolate chips, reserving about 1/4 cup for pressing onto the tops of the cookies at the end.
Scoop out onto baking sheet using a medium sized cookie scoop.
Chill for 15 minutes
Then bake for 9-10 minutes. Gently press 5 marshmallows on tops of cookies then bake for another 2 minutes until marshmallows puff up and just begin to melt.
Then press on the remaining chocolate chips.
Remove from oven and cool. The marshmallows will melt a bit more.
Enjoy all summer long!
Recipe Notes
You can use any type of chocolate chip you like (dark, milk, semi, bittersweet).
Furthermore, you can use chopped chocolate or broken up chocolate candy bars, like Hershey's.
