The girls and I were hunkered down with a terrible cold all week. This translates to: they went completely stir crazy from being cooped up and turned our entire family room into their ninja warrior playground. Aren’t kids supposed to get extra snuggly and quiet when they’re sick? Do calm kids exist? Not in the house, that’s for certain! They had more energy than ever. But I suppose a lot of adults lose their appetites when they get sick. Strike two, because I get extra hungry to the point of being hangry! So while they ran wild as ninjas I went a different kind of wild. Bakers gonna bake, and that I did. I developed all kinds of fun holiday treats along with these gooey good Chocolate Chip Peanut Butter Swirl bars.
That’s just a fancy name for chocolate chip blondies with a generous layer of homemade Peanut Butter globbed within more chocolate chip blondies then swirled around a bit to distribute it throughout the batter. Maldon Sea Salt Flakes are sprinkled on the tops for a salty twist to all those sweet and nutty elements. So these chocolate chip peanut butter swirl bars are going to give you all you love about the PB & Chocolate combo with a cookie dough twist. These are total comfort treats and a breeze to make.
Chocolate Chip Cookie Dough
The first step to these chocolate chip peanut butter swirl bars is to make the dough. For baked bars I take the easy way by making it all in one bowl, no hand mixer required. You will start of with melted butter. I’m telling you, these are so easy. And they take a couple of minutes to throw together.
Once you have your cookie dough you will put half into a 9 inch square baking dish. I lined mine with parchment paper, however, you can also butter it up and omit the parchment.
For these chocolate chip peanut butter swirl bars you can use any kind of peanut butter you like. I always have natural or homemade in our fridge, but use what you like.
Then you will drop tablespoons of peanut butter across the dough. Spread it around before topping it with the last half of cookie dough.
Then just swirl it by dragging a knife around. Note that you can also add extra peanut butter on top before swirling for, well, extra peanut butter!
Then strategically place some extra chocolate chips on top along with flakes of sea salt for your Instagram photos, and bake!
Let it bake until it is almost set but still slightly underdone in the middle so it will be gooey and soft and encase that layer of peanut butter.
Then you will spend the rest of the day sitting on your hands to stop yourself from sneaking bites! You are welcome!

Chocolate Chip Peanut Butter Swirl Bars
Chocolate Chip Cookie Dough Swirled with Peanut Butter and baked into bars, enough said! Two favorite flavors with that ooey gooey love!
- 1 stick butter melted
- 1/4 cup granulated sugar
- 1/2 cup dark brown sugar
- 1 large egg
- 3/4 teaspoon vanilla extract
- 1 1/8 cup AP Flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1 cup semi-sweet or dark chocolate chips
- 1/2 cup creamy peanut butter
- sea salt flakes to top bars with
Preheat oven to 350 degrees.
Line a 9 inch square baking dish with parchment paper. Or butter it.
In a large heatproof/ microwave safe bowl, melt your butter in microwave. Then whisk in your sugars. Whisk until dissolved. Then mix in egg and vanilla extract. Add your dry ingredients and mix with a spatula or a wooden spoon.
Add chocolate chips.
Add half of dough to the pan and spread. Then add your peanut butter on top and spread. Then top with remaining dough. Use a knife to swirl it around.
Bake for approx. 25 minutes.
Let cool until ready to cut and serve.
This can be easily doubled to fit a 9 x 13 inch baking pan.
