How is Christmas almost here? This holiday season has gone by so fast. I’ve been busy prepping all kinds of holiday treats like Salted Butterscotch Pretzel Blondies & Better Than Bobby Flay’s Buns. With Christmas dinner looming over us I was excited to team up with Asturi Foods again to showcase their bruschettini in my crispy roasted broccoli with cranberries.

This crispy roasted broccoli with cranberries has a secret texture and flavor that comes from using Asturi Bruschettini CLASSICO. The Bruschettini is turned into crumbs that coat the broccoli with flavor, texture, and an addictive crunch. This roasted broccoli is also lightly coated in olive oil, with a blend of grated Parmesan, dried rosemary, and salt and pepper.
The dried cranberries lend a bit of sweetness and tartness to the roasted broccoli. This snazzy side dish is baked until that parmesan cheese and bruschettini blend crisps up and coats the broccoli with a crunchy wafer thin dusting. The roasted broccoli is crispy on the outside from the bruschettini coating and tender on the inside.
After making and devouring my Creamy Spinach Kale Dip, the girls now call bruschettini their “appetizer”! Besides being super cute, it’s made them ask for appetizers nightly. I managed to hide a couple bags of the bruschettini from them to use for this broccoli! I’m so glad that I used them in place of bread crumbs for this broccoli dish. This truly is a special ingredient that will amp up your broccoli and any vegetable dish you want to crisp up.
Side Dishes
My kids love roasted broccoli, especially when there’s a buttery, toasted crunch to it. Any holiday side dish calls for a twist that makes it memorable and more festive. This Roasted broccoli has extra flavor due to the crushed up bruschettini.
I used the Rosemary and Olive oil flavored bruschettini, which lends a hint of holiday herbs to the roasted broccoli. I have discovered that using this bruschettini in place of bread crumbs really adds a special taste and texture that will have people asking what you did to make the roasted broccoli so good! This will certainly be a dish that will please even the pickiest eaters.

Easiest Side Dish Ever!

You only need one baking sheet, so you won’t have a bunch of dishes to wash. Major bonus, especially during busy holiday dinners!
Bruschettini crumbs are airy, tasty, and the perfect topping or coating for anything that usually calls for bread crumbs. To crush up the tiny toasts, just put them into a ziplock bag, close, and use a rolling pin to gently crush them.
To make this roasted broccoli, just line up a baking sheet with parchment paper.
Then spread broccoli florets down in a single layer. Ensure this broccoli is roasting in a single layer so each piece evenly bakes.
Next, drizzle on olive oil. Add salt and pepper to taste. A hint of dried rosemary will give the roasted broccoli a holiday vibe.
Sprinkle on dried cranberries for s pop of festive color and to add a hint of sweetness.
Then shake on some parmesan. Lastly, crush up your bruschettini into crumbs. These bruschettini jazz up this roasted broccoli by coating it with the toasty, olive oil infused crumbs.
Then just roast the broccoli for about 15 minutes.
The bruschettini and parmesan bake together to form crisps within the roasted broccoli. These crispy, bursts of flavor will have everyone asking you what you did to make the broccoli so tasty! Just look!

Ingredients
- 12 ounces broccoli florets
- 2 tablespoons olive oil
- salt and pepper to taste
- 1/4 teaspoon dried rosemary leaves
- 1/4 cup grated parmesan cheese
- 1/3 cup bruschettini crumbs
- 1/4 cup dried cranberries
Instructions

Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
1. Lay broccoli out on a single layer on the baking sheet.
2. Drizzle on olive oil.
3. sprinkle salt and pepper to taste.
4. Add dried rosemary, parmesan, and dried cranberries,
5. Crush up Asturi CLASSICO bruschettini so you have 1/3 cup. Sprinkle it all over.
6. Toss to coat with hands.
7. Bake for 15-20 minutes,
