But I also got asked to make a copycat cloud macchiato that is egg free. So I combined those requests to make this Copycat Starbucks Cinnamon Cloud Macchiato (Egg Free)
This Copycat Starbucks Cinnamon Cloud Macchiato gives you that fluffy cloud of foam with cascading espresso shots, with the flavors of cinnamon and a hint of lemon. It’s finished off with a drizzle of caramel and a dusting of ground cinnamon. And I’ll tell you how to make a Vegan Cloud Macchiato as well.

Macchiato
So let’s first talk about a macchiato. A macchiato by definition, is a stained coffee or a spotted coffee. This is due to the espresso being poured over the steamed milk.
I got some questions regarding how I assembled the Caramel Cloud macchiato on my Youtube. To all of you who commented on my video and emailed me, I love your passion and I appreciate your feedback so much. And yes, a macchiato is absolutely named such because the shots are poured over the foam. I only put the foam first since the cloud is a different texture than plain foamed milk and The espresso looks different once it trickles though. But I take it back! Haha!
For this Copycat Starbucks Cinnamon Cloud Macchiato (Egg Free), we are going the true route!
Cinnamon Cloud Macchiato
The cinnamon cloud macchiato has the flavor profile of a leche merengada. As I explained in my Copycat Starbucks Caramel Macchiato, a leche merengada is a Spanish drink flavored with cinnamon and lemon with a meringue milk.
For this Copycat Starbucks Cinnamon Cloud Macchiato I have made an egg free version. So many people have egg allergies, are vegan, or just don’t like eggs. This drink will give you some options. I will give you an egg free version that will still give you that “cloud” like milk foam. Additionally, I’ll give you a vegan option as well.

Cinnamon Lemon Syrup
The cinnamon cloud macchiato has a cinnamon lemon syrup. So the first step to making this Copycat Starbucks Cinnamon Cloud Macchiato (Egg Free) is To Make a cinnamon lemon simple syrup.
You can use a pre-made syrup also. I added a link for the Starbucks Cinnamon Lemon Syrup below. But homemade is, in my opinion, so much better and less expensive too!
To make this cinnamon lemon syrup, set a saucepan over medium low heat. Pour in equal parts of water and sugar. Toss in a cinnamon stick and some lemon peels. Then simmer for 10 minutes.
The simple syrup will be sticky and syrupy. Remove from the heat and allow to cool. It will thicken slightly upon cooling.
Then strain the cinnamon lemon syrup to remove the cinnamon and lemon peels into a glass jar and set aside.
How to make this Copycat Starbucks Cinnamon Cloud Macchiato (Egg Free)
The next step to This Copycat Starbucks Cinnamon Cloud Macchiato (Egg Free) is making a couple shots of espresso. Again, we are making a grande size since this is a drink all about Ariana Grande! Speaking of, apparently Ariana Grande got a lot of hate mail herself for collaborating on a non-vegan drink. Good thing I have her back with the Vegan Starbucks Cloud Macchiato notes I added in here. Now if only those Arianators would have my back too…!
Meanwhile, work on the egg free foam. If you prefer the meringue, reference my Copycat Caramel Cloud Macchiato.
I tested a lot, and the best way to make this cloud without meringue powder is to use gelatin. Gelatin will give the milk foam a similar texture without eggs.
Alternatively, for a vegan option, use agar and nut milk or coconut milk.
Use a large mixing bowl. Put in some warmed milk (or soy, nut, or coconut milk). Sprinkle on the gelatin or agar. Use your hand mixer on high speed and beat the mixture. As it foams, sprinkle in sugar. Sugar gives it a glossy smoothness.
Then get a mug. Put the cinnamon lemon syrup first. And then, to keep peace on earth, put your foam before the shots! Then pour on shots. Drizzle on some caramel syrup. Sprinkle on some ground cinnamon and enjoy!

This is the Egg Free Version of a Starbucks Cloud Macchiato.
Ingredients
Cinnamon Lemon Syrup
- 3/4 cup water
- 1/8 cup lemon juice
- 3/4 cup sugar
- 1 cinnamon stick
- 2 1 inch lemon peels
STARBUCKS CINNAMON CLOUD MACCHIATO (EGG FREE)
- 2 espresso shots
- 1/4 cup warmed milk or nut milk or vegan milk of choice
- 1/2 teaspoon gelatin or agar for vegan option
- 1/4 teaspoon sugar
- 1-2 tablespoons cinnamon lemon syrup
- Caramel syrup
- pinch ground cinnamon for topping

This will keep up to 3 weeks in an airtight container refrigerated.
