Whenever the weather turns warm and all those Spring and Summer holidays like Easter and Mother’s Day pop up we all start brunching even more. And I am the kind of person who brunches like a fiend. I want it all, pastries, cakes, the works. When I’m hosting a homemade brunch, I want my guests to feel like they’re at the best brunch buffet ever. But making a brunch spread shouldn’t be a daunting task. So when I put on brunch I make easy dishes that only taste like you’re a pastry chef that slaved for days in preparation!

These strawberry buns with a hint of orange couldn’t be easier or faster to make. These have no yeast, so there isn’t any rising time. The dough is made simply in one bowl. These buns have just a hint of orange, cinnamon, and coriander to amp up that beautiful, bright strawberry flavor. They are rolled into a log, cut into 12 even pieces then baked in a muffin tin. Once baked, they are smothered with an orange cream cheese frosting. Served warm or room temperature, you will be sharing this recipe to everyone who takes a bite!

30 Minute Strawberry Buns
These 30 Minute Strawberry buns begin with an easy sweet dough. First, preheat your oven to 350 degrees. Then butter up 12 muffin tins. Alternatively, use cooking spray or lightly brush bottom and sides of tin with canola oil.
This dough is sweet and yields a fluffy, tender bite. The ground coriander gives a hint of citrus that enhances the fruit and fresh orange flavors. For more about coriander and using it in sweet bakes, check out my Orange Coriander Madeleines.

In a large bowl, use a wooden spoon (or clean hands) to mix together flour, salt, baking powder, coriander, and sugar. Then use a pastry blender to cut in diced up cold butter until the mixture resembles tiny pebbles. Next, make a well in the middle. Pour in milk. Use either the spoon or your hands to gently mix up until the soft dough forms.
Then sprinkle flour onto a surface and turn the dough out. Knead it for 30 seconds. Then flour a rolling pin and roll out the dough into a 12 inch rectangle, forming the sides as needed. The dough should be about an inch thick. Let this rest briefly as you make your strawberry filling.

Strawberry Filling
Hull and dice up fresh strawberries until you have 1 cup into a bowl. Then add strawberry jam, ground cinnamon, and orange zest. Mix until the strawberries are coated. Then spread this filling over the dough, being sure to leave a 3/4 inch border free around the long “seam” sides.
Next, tightly roll up the dough into a log, pressing the seam to close. Cut into 12 even slices. Place each round slice into a muffin tin.
Bake the 30 Minute Strawberry buns for approx. 22-28 minutes. Then allow them to cool down a bit while you make the Orange Cream Cheese Frosting.

Orange Cream Cheese Icing
This orange cream cheese frosting is luscious and silky smooth. As it spreads over the warm strawberry buns it seeps into every nook, crease, and cranny. This orange cream cheese frosting is creamy and sweet, with a touch of fresh orange juice and zest. It’s amazing and will absolutely lead to bad brunch manners like finger licking and groans of delight!
Use either a hand mixer or a firm spatula to mix this icing in a large bowl. Combine the room temperature cream cheese and butter. Blend until completely smooth. Then add powdered sugar, freshly grated orange zest, orange juice, and vanilla extract.

Since I have kids who love tiny oranges like mandarin or clementines, I tend to use those in my recipes. The size and amount of zest and juice work perfectly for these strawberry buns! If you want to know the difference between the orange varietals, check out, “Name That Orange”!
The last step before polishing off all of these Strawberry Buns is to remove them from the muffin pan and slather on that frosting. Serve warm or at room temperature.
