It’s been a hot, muggy, steamy summer in St. Louis. And it’s just going to go downhill from here. Rain, more heat, and so much humidity is definitely on the way. So I desperately want a vacation and something to keep me cool. These tropical popsicles fill in those cravings and then some!
The girls and I have had such a fun summer to far. And I have been busy, hence my lack of posting the last few weeks! Bea had her first ballet recital and it was the cutest performance ever!
And besides that, we’ve just been going to every children’s venue in St. Louis. So we are happy, tired, and ready for a snack. You and your family will love these smoothie popsicles!

Tropical Smoothie Pops With Granola
I love keeping homemade popsicles like these and Light Cherry Cheesecake Popsicles on hand. They are chock full of fresh fruit without all that sugar and artificial flavors. And these tropical smoothie popsicles taste like taking a bite into a beach vacation!
These tropical smoothie pops with granola are simple to prepare. I have included my tropical granola recipe and instructions in this post. But feel free to use any granola you have on hand.
The only special equipment needed is a blender and a popsicle mold set.

Tropical Granola
This tropical granola is all about coconut and the flavors of the tropics! Yes, my mind is immersed in the daydream of Hawaii or the Caribbean right now. And it shows on my Instagram, where everything is yellow and white; mango and coconut!
Like the flavors of my Top Chef Key Lime Crunch, this tropical granola uses shredded coconut, banana chips, macadamia nuts, diced pineapple and mango. It’s crunchy, slightly sweetened with honey, and perfect for topping Dragon fruit smoothie bowls and garnishing these popsicles. Or eating by the handful. Up to you!
To make this beachy treat, begin by preheating the oven to 300 degrees. Line a baking sheet with parchment paper.
Use a sturdy cutting board to chop up roasted macadamia nuts. Dice up the banana chips and dried fruit. Set aside.

Then using a microwave safe bowl, scoop in coconut oil and melt it in the microwave. It should only need 30 seconds. Once melted, whisk in the honey, vanilla extract, and lemon juice. Then set aside for a moment.
In a large bowl, combine the oats, ground flaxseed, dash of brown sugar, sea salt, and shredded coconut. Give it a good mix.
Then pour the oil mixture over the oats and stir until coated. Spread the granola mixture onto the parchment in a single layer.
Bake for 30-35 minutes, stirring every 10 minutes. Watch the mixture carefully near the end. Once it is a light brown and toasty, remove from the oven.
Then add the dried fruit and macadamia nuts. Mix well. Allow the tropical granola to cool completely.
Move on to the tropical smoothie pops.

Tropical Smoothie Pops
The smoothie popsicles are made up of a fresh fruit purée that is swirled with a honey sweetened, coconut kissed Greek yogurt mixture.
First, make the Greek yogurt layer. In a bowl, whisk together the Greek yogurt, honey, vanilla extract, and coconut milk until smooth. I always have canned coconut milk lying in wait for my Coconut Milk Cinnamon Rolls and CBD Golden Milk. But you can also use the coconut milk in the carton if that’s what you have.
Then peel and chop up a mango. If you need a demonstration on how to cut a mango, check out my Summer Sangria! Slice a banana. And chop up fresh pineapple. If you use canned pineapple, just drain it. Add the fruit to a blender and use the medium setting to purée. If it is too thick, add a couple tablespoons of coconut milk to thin it out and add some creaminess to the fruit layer.
Take your popsicle molds. Put two teaspoons of fruit purée. Then layer on two teaspoons of Greek yogurt mixture. Repeat, leaving room for your granola under the “fill line”. Before adding the granola, take a skewer to gently swirl the purée and Greek yogurt. You can also use the popsicle stick. Lastly, add the granola, and push it very gently to set it.
Then insert the popsicle sticks and freeze for about 6 hours or overnight.
To remove The tropical smoothie pops with granola, run each mold under hot water for 20 seconds. The slide it out and enjoy immediately!

- 1/2 cup pineapple diced

This tropical granola has flax seed and is lightly sweetened. Dried Coconut, mango, pineapple, and banana are mixed with roasted macadamia nuts to give you a crunchy and beachy bite!
Ingredients
- 1.5 cup old fashioned oats
- 2 tablespoons ground flaxseed
- 1 tablespoon brown sugar
- 1/4 cup shredded coconut flakes
- 1/2 teaspoon fine sea salt
- 2 tablespoons coconut oil melted
- 2 tablespoons honey
- 1 teaspoon lemon zest
- 1/4 teaspoon vanilla extract
- 1/2 cup dry roasted macadamia nuts chopped
- 1 cup diced mixed dried fruit as follows: 1/3 cup pineapple, 1/3 cup mango, 1/3 cup banana chips
