Let’s dream about the perfect savory scone for a moment. Imagine Smokey, slightly sweet, with fresh fennel and citrus, black pepper, bacon, and a buttery oat flour base. These smoked honey, fennel, bacon scones are my new favorite brunch food!
These buttery scones begin with a base of oat and all purpose flour. Fresh fennel is chopped and incorporated in with smoked honey, Orange zest, crispy bits of apple wood bacon and fresh black pepper.
And wait, there’s glaze! A smoked honey glaze with orange and a touch of butter gets brushed on the hot scones. So now that I have your attention, let’s bake the best scones!

Smoked Honey
One of my best friends also happens to be one of the most incredible bakers I know. He and I have a genuine friendship based on laughter, fun, faith, and flavor! In fact when we have loud chats, we only stop giggling and rambling on to talk about the latest and greatest ingredients to use in our recipes.
Food, especially anything baking related, gets our attention big time. The other day he text me two life changing words: smoked honey. I am certain he heard my scream of joy in response.
How had I not heard of this genius ingredient? And how was I going to make something spectacular enough to showcase it for all of you? I did research and a lot of recipe testing. And then I created the best savory scones ever.
Smoked honey is grilled honey that is Smokey, sweet, and a genius twist on honey. This is an ingredient that bakers and chefs should definitely use in their arsenal of culinary inspiration.

Oat Flour & Making these scones gluten free
Some readers asked me to share gluten free bakes. So I added notes to tweak this recipe to give you the option of making these the best tasting gluten free scones.
I have been experimenting with different flours a lot more lately. I will love Rye flour forever after making my Rye Chocolate Chip Cookies. But oat flour is another great flour to change up bakes.
Oat flour is simply oats ground into whole grain flour. Oat flour is gluten free and adds a touch of oat flavor to the scones. To make these smoked honey, bacon, fennel scones gluten free, swap out the all purpose flour for Gluten-free AP flour.

Smoked Honey, Fennel, Bacon Scones
The first step to making these smoked honey, fennel, bacon scones is to cook the bacon.
Preheat the oven to 400 degrees F. Using the same method as I mentioned in Pumpkin Vodka Penne, Line a baking sheet with nonstick foil. Put the bacon in a single layer and bake for about 15 minutes, until crispy. Then carefully remove to paper towels and allow it to cool. Once cool, crumble it into bits and set aside.
Next. mix the dry ingredients in a large bowl. Add the flours, baking powder, baking soda, salt, and pepper. Then give it a mix. Grate fresh orange zest and divide the zest so you save a teaspoon for the glaze. Then Incorporate the rest along with some fresh fennel into the dry ingredients.
In another bowl, whisk together the egg and heavy cream. Drizzle that over the dry ingredients. Pour in the smoked honey. Mix to incorporate it into a dough. Finally, add in the bacon bits. The dough shouldn’t be crumbly or too sticky. It should come together cohesively to form a disc for the next step.
Then turn the scone mixture onto either a lightly floured surface or a piece of parchment paper. Pat it into a round that is about 3/4 inch thickness. Use a knife to slice it into 8 wedges. Then place the wedges onto a parchment lined baking sheet. Brush the scones with heavy cream. Bake for 25-30 minutes.

Smoked Honey Orange Glaze
While the scones are baking make the glaze. This glaze is made up of honey, fresh orange zest and juice, along with a touch of butter. It adds a touch of citrusy sweetness and stickiness to each smoked honey, fennel, bacon scone.
Put a small saucepan over medium low heat. Add all of the ingredients and heat for 5 minutes. Then remove from the heat.
When the scones come out of the oven, use a pastry brush to brush glaze over each scone while they are hot. Then repeat. You will have enough glaze to brush each scone twice.
Allow the scones to cool until ready to serve.

Ingredients
- 2 Cups All purpose Flour Or use gluten free AP Flour
- 1/2 cup oat flour
- 2 teaspoons baking powder
- 1.5 tablespoon orange zest divided
- 2 tablespoons fresh fennel chopped
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon fine sea salt
- 5 thick strips of Applewood Bacon
- 1/2 cup unsalted butter cold and diced
- 1/4 cup smoked honey
- 1 large egg
- 1 – 1¼ cup heavy cream start with one cup and use more as needed
- 1/8 cup heavy cream for brushing over scones before baking

- 1/4 cup smoked honey
- 1 tablespoon orange juice
- 1 teaspoon orange zest
- 1 tablespoon butter
