The chocolate filling is whipped, smooth, creamy, and absolutely decadent while still being light in texture and taste. The bittersweet chocolate is perfectly softened with mascarpone cheese while being uplifted by the heavy cream. This no-bake tart is simple elegance at its finest. It also only takes a few ingredients. The combination of mascarpone cheese, heavy cream, vanilla extract, sugar, and dark chocolate is all you need. Bonus, this gives you an excellent excuse to use up any leftover cookies or blondies you have on hand. Alternatively, I have a simple cookie crust recipe included below.
I made my popular Chocolate Oatmeal Crackle bars last night and since I cannot go one day without making some kind of dessert, I reinvented the leftovers into cookie crust! And let me tell you, those bars make a phenomenal pie crust, especially for this mascarpone chocolate tart. With rich browned butter, a hint of oats, double chocolate, and pecans, I’m talking major wow factor in each bite.

Men Surprise You Sometimes
It was Valentine’s Day and I told you a few posts back how Grant and I are boring homebodies who don’t ever celebrate anything. I was even texting with my friend about how the extent of our gift giving is usually gourmet granola and croissants from a local bakery that we love. But you guys, that sweet man showed up with 2 dozen roses, a beautiful bottle of red, and swept me off my feet! I guess we aren’t that boring after all! Or he got worried about all new suitors that are propositioning me over Instagram after the show aired, ha! Whatever it was, my friend and I decided that #grantwins!
Side note, we were a little boring. We skipped a romantic dinner and night out so we could stay in and watch Miss Americana, the epic Taylor Swift documentary on Netflix, and the House Hunters about a Colorado Throuple.
And on to the best and easiest no bake chocolate tart recipe!

Cookie Crust
The first step to making this chocolate mascarpone tart is to make the crust. As I mentioned, I used the leftovers of my crackle bars. But you can use any leftover chocolate chip or oatmeal cookies you have. If using homemade chewy cookies all you have to do is put 2 1/4 cups of crushed up cookies into a food processor and blitz until you have crumbs. Then press those cookies into a 9 inch tart pan along the bottom and up the sides. Then chill while you make the filling. That’s it! So easy!
If you make a cookie crust from scratch, simply prepare the cookie crust recipe I have given you below. Then press the dough into the tart pan. Bake for 16-18 minutes. Then cool completely before filling with the chocolate mascarpone mousse.

Whipped Chocolate Decadence
I have had major chocolate cravings the last two days. I went delicate for Valentine’s Day with Rose Shortbread Cookies and the need for chocolate hit me hard last night. So this mascarpone chocolate tart was in my daydreams all morning until I made this into a sweet treat reality.
It was Saturday morning when I came up with this tart, which is the busiest time at Whole Foods over here. So I made this happen with only ingredients I had in the house. That is what I love about no bake desserts like this chocolate tart or 4 ingredient chocolate mousse. They use only a few ingredients that you usually already have, and can be made in minutes.
The filling for this chocolate mascarpone tart is simply mascarpone cheese whipped with vanilla extract, sugar, and heavy whipping cream until stiff peaks form. Then 2/3 cup of the mascarpone cream is removed and reserved for dotting on top of the finished tart. The remaining filling is whipped with melted chocolate.
Then with some easy piping this tart comes out looking like you got it at a pastry shop. Use a French Star tip to make it look like I did.

Chocolate Mascarpone Tart With Cookie Crust

Ingredients
Chocolate Chip Cookie Crust
- 1/2 cup butter salted and softened
- 2/3 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1¼ cup AP Flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi sweet chocolate chips
Chocolate Mascarpone Filling
- 1 cup heavy whipping cream
- 8 ounces mascarpone cheese
- 1/4 cup granulated sugar
- 1½ teaspoons vanilla extract
- 6 ounces bittersweet chocolate at least 60%
Instructions
Cookie Crust

Preheat oven to 350 degrees.

Beat butter with sugar for 3 minutes with a hand mixer.

Scrape down bowl and add egg and vanilla extract. Beat for 2 minutes,

Then add the flour, salt, baking powder, baking soda. Turn to lowest speed and mix until a dough forms.

Gently beat in chocolate chips.

Turn dough into tart pan. Press in to cover sides and bottom.

Bake 16-18 minutes. Cool completely before filling.
Chocolate Mascarpone Filling

Chop chocolate and Melt chocolate in a heatproof bowl. Start with 1 minute and stir until smooth. If needed, heat an extra 15 seconds.

In a large bowl, add sugar, vanilla, mascarpone cheese, and heavy whipping cream.

Beat on low speed until it is mixed. Then turn up to medium high speed and beat the ingredients until stiff and thick.

Remove 2/3 cup of the mascarpone cream to a piping bag.

Pour chocolate into remaining cream. Fold in with a spatula.

Remove to a second piping bag.

Then pipe out the mousse and mascarpone cream as desired into the cookie crust.

Chill 60 minutes before serving.
