The ultimate spicy burger has it all. I’m talking a quarter pound of ground chuck, crispy applewood smoked bacon, roasted hatch Chiles, gooey American cheese, and a tangy sauce dripping down the brioche bun to finish it off in mouthwatering style.
This burger is the one I decide I want in the morning and hungrily crave for the entire day. This is my favorite grilled burger recipe! This loaded burger is absolutely a cold beer’s BFF!
This juicy burger is really spicy, so if you get heartburn you’ll be in for it. Now that you’ve been warned, let’s enter burger heaven!


Quarantine Cooking
I got the inspiration for this burger from binge watching a show called Food Paradise from the Travel channel. They featured a restaurant that fire roasts hatch Chiles before piling them onto a burger. That had me drooling while watching and a hatch Chile burger was stuck in my mind.
I’m not traveling anywhere anytime soon. And let’s be honest, the only time I leave the house is for walks and curbside grocery runs. So we are doing all the cooking ourselves these days.
Oh wow, I just realized that being under quarantine isn’t that much different from the bulk of my normal life. Besides my TV cooking, I am a total homebody. Yikes, I really need a more exciting life when this is over!

The ultimate Spicy Burger
There are a few homemade components to make this the best spicy burger. Everything is really easy to make too.
It’s BBQ season, so we have been grilling a lot these days while the kids play outside. For these loaded burgers we grilled up hand smashed quarter pound chuck burgers alongside thick-cut applewood smoked bacon.
To make a roasted hatch Chile burger we are broiling the Chiles until they are charred all over. These Chiles are scraped of some of the seeds and chopped. Then we are upping the spice factor with a tangy spicy sauce that’s similar to shake shack sauce. Only instead of pickle brine, this has a blend of jalapeño brine and apple cider vinegar.

The Ultimate Spicy Burger With Hatch Chiles
The ultimate spicy burger has it all. I’m talking a quarter pound of ground chuck, crispy applewood smoked bacon, roasted hatch Chiles, gooey American cheese, and a tangy sauce dripping down the brioche bun to finish it off in mouthwatering style.
Ingredients
- 1 lb ground chuck
- 1 tablespoon olive oil
- 4 slices American cheese
- salt to taste
- black pepper to taste
- 4 hatch chiles
spicy sauce
- 1.5 teaspoon ketchup
- 1/4 cup mayonnaise
- 1.5 teaspoon honey mustard
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1.5 teaspoon jalapeno brine
- 1 teaspoon Apple cider vinegar
- 8 slices applewood smoked bacon
- 4 brioche buns Or potato
Instructions

Put the oven to broiler mode. Spread hatch Chiles onto a baking sheet. Then broil for about 4 minutes on each side, until the skins are charred. Then turn the oven off and let it steam for 5 minutes. Then allow to cool.

Wear gloves to slice the Chiles as they’re spicy! Slice and scrape out seeds then chop. Note that the more seeds you leave the spicier they will be.

Then make your sauce by simply whisking all the ingredients together in a bowl. Chill until ready to serve.

To make burgers, divide ground beef into 4 patties. Smash them into thin patties. Then rub a bit of olive oil and Salt and pepper on each side. Grill to desired doneness.

*grill the bacon or bake it in the oven.

When your burgers are ready, put on sliced cheese and allow it to begin melting.

Use brioche buns or potato buns. Put a burger patty in a bun. Then sprinkle on Chiles. Put a couple slices of bacon. Then drizzle on spicy sauce. Serve with any additional toppings you love!
