What I love about semi-bake desserts like this easy mascarpone tart is how simple yet elegant it is. It takes only minutes to create and is chilled in about an hour. This tart checks all the boxes. It’s salty yet sweet, crunchy but creamy, cool with warm notes, and insanely delicious. And the filling is a canvas for any flavor additions or fruit topping you dream up depending on the holiday or occasion.
I zoomed in to Show Me St. Louis to make this mascarpone tart with pretzel graham crust. For the show I went with fresh strawberries and blueberries since Labor Day was just around the corner when I did the segment. However, feel free to top the tart with any fresh fruit like sliced figs, peaches, berries… You get the idea! Additionally, you can even add sheen to the fruit. Simply warm apricot or strawberry jam and brush it gently over the fruit.

This has been a hectic year for all of us. As we move into 2021, I’m still taking a small break from posting weekly on this blog for a bit. In fact, as you may have guessed from when I did the segment, I started writing this post back in September! I got so busy in the last few months that I have a ton of recipe drafts that I’ll start finishing up. This creamy and dreamy tart yields a light and silky bite with crunch from the crust. It’s got it all and it’s incredibly easy to make. Usually when I create recipes for TV I make them quick. Mascarpone Tart With Pretzel Graham Crust
Fresh berries and smooth Mascarpone cream fills a salty, sweet, and crunchy crust for an easy dessert that is ideal for all occasions. This mascarpone tart with pretzel graham crust is simply dreamy! With a short Ingredient list, it’s also easy and quick to make.
Ingredients
Crust
- 1 cup pretzels crushed to crumbs
- 1 cup honey graham crumbs
- 2 tablespoons brown sugar light
- 1/4 teaspoon fine sea salt
- 7 tablespoons unsalted butter melted
- 1/4 teaspoon vanilla extract or powder
Filling
- 8 ounces mascarpone cheese
- 1 ¼ cup heavy whipping cream
- 1/4 cup granulated sugar
- 1 tablespoon honey
- 1 teaspoon vanilla bean paste or vanilla extract
- pinch fine sea salt
- 1/2 cup fruit berries, figs, cherries
Instructions

Preheat oven to 350 degrees F

In a food processor, Combine graham crackers and pretzels with sugar and salt. Grind to fine crumbs. *Feel free to use store bought crumbs. Or, if you don’t have a food processor, put pretzels and graham crackers in a gallon ziploc bag and crush with a rolling pin

Melt butter and add to crumbs. Pulse to combine a few times.

Then dump crust into a 9 or 10 inch tart pan. Use fingers to Push the crust into bottom and up sides of pan.

Bake for 9-11 minutes.

Cool completely and make filling

Place mascarpone cheese into a bowl. Use a hand mixer or whisk to beat it on medium speed for a minute, until smooth.

Then add vanilla, honey, and pinch of salt. Beat about 45 seconds to combine into a silky mixture.

In a separate bowl, beat heavy whipping cream until stiff peaks form. Fold this mixture into the mascarpone.

Then spread mixture into the cooled tart crust.

Top with desired fruit. Chill for at least one hour before serving
