Creamy, whipped no bake cheesecake layered with buttery graham crumbs and fresh macerated passion fruit pulp. These no bake passion fruit cheesecake cups only take a few minutes to prepare and 8 ingredients!
Use a food processor to pulse graham crackers into crumbs. In a bowl, melt the butter. Add graham crumbs and mix well, Set aside,
Remove the pulp from the passion fruits and place it into a bowl. Add 1 tablespoon of granulated sugar and stir. Allow to macerate while you make the no bake cream cheese.
In a large bowl, use a hand mixer to beat the cream cheese with the sugar for two minutes, until fluffy.
Then add the vanilla, lemon zest, and heavy cream. Whisk on high for another minute, or until the mixture is whipped in texture.
Put the mixture into piping bag.
Then place a couple of tablespoons of the graham crumbs into a small mason jar or cup of your choice.
Pipe in some of the no bake cheesecake mousse.
Then add about a tablespoon or so of passion fruit pulp.
Sprinkle on a tablespoon or so of graham crumbs.
Pipe on more no bake cheesecake.
Top with more passion fruit pulp.
Sprinkle with any remaining graham crumbs.
Allow to chill for at least an hour before serving.
