Crispy edges with a lightly spiced soft custard center, these baked french toast muffins are ready in 30 minutes and crowd pleasing!
Tear or slice bread into 1 inch cubes.
In a large bowl, gently whisk together the eggs, vanilla, milk, spices, and salt.
Then add bread and toss to coat.
Preheat oven to 350 degrees and brush muffin tins with melted butter.
While the oven heats, toss the bread a few more times to soak up all the custard.
Then divide up the french toast into the muffin tins, packing down as necessary.
Mix the topping of sugar and cinnamon and sprinkle on top.
Then bake 25-30 minutes, until they are puffed up and golden.
Serve with a dusting of powdered sugar and maple syrup.
*Use any kind of milk, like nut milk.
*For a more decadent version, use 1 cup milk plus 2/3 cup half and half!
