In a small bowl, heat milk and the sprinkle over yeast. Allow you proof for 10 minutes.
Then in a large bowl, whisk together the flours, salt, and sugar. Make a well. Then add yeast mixture, egg, and lemon juice and vanilla.
Gently mix into batter. Don’t over-mix.
Then cover loosely and let it rise for an hour.
Place the pan over medium heat. Brush the cavities with melted butter.
Pipe or spoon the batter into pan, about a tablespoon.
When the tops are bubbly then flip using a fork and cook other side.
Dust with powdered sugar and serve with maple syrup and fruit.
