Dutch Mini Pancakes (Poffertjes)

Dutch mini pancakes are bite sized, poppable, airy, and perfect for tiny hands. Serve them in a bowl for a fun take on the new tiny pancake cereal craze! Dutch mini pancakes, known as Poffertjes, are tiny yeasted pancakes found throughout the Netherlands.

  1. In a small bowl, heat milk and the sprinkle over yeast. Allow you proof for 10 minutes.

  2. Then in a large bowl, whisk together the flours, salt, and sugar. Make a well. Then add yeast mixture, egg, and lemon juice and vanilla.

  3. Gently mix into batter. Don’t over-mix.

  4. Then cover loosely and let it rise for an hour.

  5. Place the pan over medium heat. Brush the cavities with melted butter.

  6. Pipe or spoon the batter into pan, about a tablespoon.

  7. When the tops are bubbly then flip using a fork and cook other side.

  8. Dust with powdered sugar and serve with maple syrup and fruit.
