Overnight Pumpkin Oats

Overnight Pumpkin Oats is a fall spin on a simple breakfast favorite. Overnight oats are healthy, quick, and ready in the morning without having to cook or prep.

Ingredients

  • 1/2 cup old fashioned oats
  • 1/4 cup pumpkin puree
  • 1/2 cup milk or nut milk of choice
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons flax meal or chia seeds
  • 1/2 teaspoon pumpkin pie spice
  • 1 tablespoon maple syrup or honey
  • 2 tablespoon pumpkin seeds optional topping
  • 1 tablespoon currants or raisins optional topping
  • 1 tablespoon chocolate chips optional topping

Instructions

  1. Place all ingredients (except toppings) into a jar or container with lid. Stir it up and cover overnight.

    Then top with toppings of choice. 

    This overnight pumpkin oats may be served warm or cold.
