Velvety and smooth mascarpone cream whipped with melted chocolate is set atop a chocolate chip cookie crust and dotted with extra mascarpone whipped cream for a decadent no bake dessert.

Chocolate Chip Cookie Crust

  • 1/2 cup butter salted and softened
  • 2/3 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup AP Flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi sweet chocolate chips

Chocolate Mascarpone Filling


Cookie Crust

  1. Preheat oven to 350 degrees.

  2. Beat butter with sugar for 3 minutes with a hand mixer.

  3. Scrape down bowl and add egg and vanilla extract. Beat for 2 minutes,

  4. Then add the flour, salt, baking powder, baking soda. Turn to lowest speed and mix until a dough forms.

  5. Gently beat in chocolate chips.

  6. Turn dough into tart pan. Press in to cover sides and bottom.

  7. Bake 16-18 minutes. Cool completely before filling.

Chocolate Mascarpone Filling

  1. Chop chocolate and Melt chocolate in a heatproof bowl. Start with 1 minute and stir until smooth. If needed, heat an extra 15 seconds.

  2. In a large bowl, add sugar, vanilla, mascarpone cheese, and heavy whipping cream.

  3. Beat on low speed until it is mixed. Then turn up to medium high speed and beat the ingredients until stiff and thick.

  4. Remove 2/3 cup of the mascarpone cream to a piping bag.

  5. Pour chocolate into remaining cream. Fold in with a spatula.

  6. Remove to a second piping bag.

  7. Then pipe out the mousse and mascarpone cream as desired into the cookie crust.

  8. Chill 60 minutes before serving.
