S'Mores Cookies

S'Mores Cookies are gooey, salty, and sweet. They are the summer campfire cookie that will give you all you love about a S'More in a simple snack that is sure to delight all!

Ingredients

  • 3/4 cup Butter room temperature
  • 1 cup Brown Sugar
  • 1/2 cup granulated sugar
  • 2 eggs room temperature
  • 2 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 2 cups AP Flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 10 oz. chocolate chips of your choice reserve 1/4 cup for tops of cookies
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 365 degrees. Line baking sheet with parchment paper.

    S'Mores Cookies are gooey, salty, and sweet. They are the summer campfire cookie that will give you all you love about a S'More in a simple snack that is sure to delight all! Use your food processor to finely grind up a sleeve of honey graham crackers. 

    In a bowl, whisk all of your dry ingredients (flour, salt, baking powder and baking soda, and graham cracker crumbs).

    In the bowl of your stand mixer, cream butter and sugars for 5 minutes.

    Then add eggs one at a time, beating after each addition.

    Add vanilla extract.

    Continue to beat on medium speed for 3 minutes.

    Turn mixer to "stir" setting and gradually add in dry ingredients. 

    Then mix in chocolate chips, reserving about 1/4 cup for pressing onto the tops of the cookies at the end.

    Scoop out onto baking sheet using a medium sized cookie scoop. 

    Chill for 15 minutes 

    Then bake for 9-10 minutes. Gently press 5 marshmallows on tops of cookies then bake for another 2 minutes until marshmallows puff up and just begin to melt. 

    Then press on the remaining chocolate chips.

    Remove from oven and cool. The marshmallows will melt a bit more.

Recipe Notes

You can use any type of chocolate chip you like (dark, milk, semi, bittersweet).

Furthermore, you can use chopped chocolate or broken up chocolate candy bars, like Hershey's.
