Pumpkin Brownies

Pumpkin Brownies are a fudge like brownie base with pools of melting bittersweet chocolate and a pumpkin pie spiced swirl.

Servings 12 squares


Brownie Batter

  • 2 large eggs
  • 1 1/8 cup granulated sugar
  • 3/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 stick unsalted butter melted
  • 3/4 cup AP flour
  • 3/4 cup bittersweet chocolate chips

Pumpkin Swirl


Brownie Batter

  1. Preheat oven to 350 degrees. Line a 9 inch square pan with parchment paper. Butter the paper.

    Melt butter and set aside.

    In a large bowl, whisk together the eggs with the vanilla extract, cocoa powder, salt and baking powder. 

    Then add in sugar and whisk before adding melted butter.

    Next, add flour and whisk until smooth.

    Fold in bittersweet chocolate chips. 

Pumpkin Swirl

  1. In a small bowl, whisk egg yolk, pumpkin, brown sugar, pumpkin pie spice, and vanilla, and pinch of salt. 

  2. To assemble:

    Put all of the brownie batter into pan.

    Using a tablespoon, drop 6 spoonfuls of pumpkin filling across the batter. Use a knife to "swirl" it around.

    Bake for approx. 45 minutes.

    Allow to cool completely!
