Apple Cider Muffins are your new fall morning treat! Perfect for picnics, brunch, breakfast, or a light snack. These muffins have fresh apples, apple cider, and self rising flour for a fluffy, light bite. Scented with cardamom and cinnamon, these are a fall treat you will delight in!
Preheat oven to 400 degrees. Line 12 muffin tins
1. In a bowl, mix together the self rising flour, spices, and salt.
2. In a large bowl, melt your butter and allow to cool a bit.
3. Whisk sugars into the butter until smooth and dissolving, a minute.
4. Add eggs and apple cider and whisk until fully incorporated.
4. Add dry ingredients. Switch to a wooden spoon or spatula and gently incorporate.
5. Peel and dice apples then fold into batter.
6. Divide evenly among muffin tins.
7. Bake approximately 22-25 minutes.
8. Serve warm with butter or apple butter.
If you do not have self rising flour, substitute with AP Flour. Use 1 1/3 C. AP Flour, 1.5 teaspoons baking powder, and 1/2 teaspoon of salt.
