This is perfect to make on Sunday evening and have for those busy Mondays!
Overnight Pumpkin Oats are filled with ground flax seed, pureed pumpkin, oats, and milk. Pumpkin pie spice and pure maple syrup give you a healthy breakfast that tastes like you are eating a slice of pumpkin pie! These overnight pumpkin oats are adaptable and you can swap out the milk for nut milk or coconut milk for a vegan option. How To Make Overnight Pumpkin Oats
Place all of your ingredients in a jar or airtight container with a lid. Stir it all up, cover, and let it sit in the fridge overnight. That’s it!
Then, the next morning, give it a good stir.
Top with any desired topping and enjoy right out of the container. You can also warm it up before topping and serving for a warm pumpkin oatmeal.

Overnight Pumpkin Oats is a fall spin on a simple breakfast favorite. Overnight oats are healthy, quick, and ready in the morning without having to cook or prep.
- 1/2 cup old fashioned oats
- 1/4 cup pumpkin puree
- 1/2 cup milk or nut milk of choice
- 1/2 teaspoon vanilla extract
- 2 teaspoons flax meal or chia seeds
- 1/2 teaspoon pumpkin pie spice
- 1 tablespoon maple syrup or honey
- 2 tablespoon pumpkin seeds optional topping
- 1 tablespoon currants or raisins optional topping
- 1 tablespoon chocolate chips optional topping
Place all ingredients (except toppings) into a jar or container with lid. Stir it up and cover overnight.
Then top with toppings of choice.
This overnight pumpkin oats may be served warm or cold.
