But for the busy weekdays or times when we don’t want to spend time cooking in the morning I like to have a healthy and satisfying breakfast ready to go. These Overnight Pumpkin Oats are so tasty that they’re like eating a bowl of pumpkin pie for breakfast, only this is a healthy alternative! This is perfect to make on Sunday evening and have for those busy Mondays!
Overnight Pumpkin Oats are filled with ground flax seed, pureed pumpkin, oats, and milk. Pumpkin pie spice and pure maple syrup give you a healthy breakfast that tastes like you are eating a slice of pumpkin pie! These overnight pumpkin oats are adaptable and you can swap out the milk for nut milk or coconut milk for a vegan option. These oats will provide energy and a tasty breakfast that you can devour straight from the fridge. This is also a fantastic way to use all of the leftover fresh or canned pumpkin you may have.

There are so many benefits to overnight oats. These Overnight Pumpkin Oats are a Fall twist on a tried and true way to simplify morning meals. When you make overnight oats, you are essentially allowing your oats to soak up all of the liquid, eliminating the usual cooking time.
These Overnight Pumpkin Oats can be made with a variety of toppings like pumpkin seeds, cranberries, currants, pecans, chocolate chips, or even Raisin and Pecan Granola for a crunchy addition.

When you make these overnight pumpkin oats, be sure to use pure canned pumpkin and not pumpkin pie filling. You can find pumpkin at your local store or buy it online here,
Farmer’s Market Organic Pumpkin Puree, 16 Ounce (Pack of 12). Alternatively, you can use fresh pumpkin.
How To Make Overnight Pumpkin Oats
Place all of your ingredients in a jar or airtight container with a lid. Stir it all up, cover, and let it sit in the fridge overnight. That’s it!
Then, the next morning, give it a good stir.
Top with any desired topping and enjoy right out of the container. You can also warm it up before topping and serving for a warm pumpkin oatmeal.

Ingredients
- 1/2 cup old fashioned oats
- 1/4 cup pumpkin puree
- 1/2 cup milk or nut milk of choice
- 1/2 teaspoon vanilla extract
- 2 teaspoons flax meal or chia seeds
- 1/2 teaspoon pumpkin pie spice
- 1 tablespoon maple syrup or honey
- 2 tablespoon pumpkin seeds optional topping
- 1 tablespoon currants or raisins optional topping
- 1 tablespoon chocolate chips optional topping
Instructions

Place all ingredients (except toppings) into a jar or container with lid. Stir it up and cover overnight.
Then top with toppings of choice.
This overnight pumpkin oats may be served warm or cold.
