I had a request to throw up a last minute Easter treat that’s easy, crowd pleasing, and festive. This Easy Chocolate Chip Cookie Cake comes together in five minutes with one bowl. Chopped mini chocolate Cadbury eggs are sprinkled on top for Easter flair. The optional chocolate frosting gives the cookie cake the look of those fun mall cakes. But this homemade versions is soooo much better!
This Easter themed cookie cake is perfect for picnics, parties of any kind, and anytime a massive chocolate chip cookie craving hits! And if it’s not Easter, just substitute the Cadbury chocolate eggs for more chocolate chips or M&Ms. Either way, this is the best chocolate chip cake recipe out there!
This cookie cake is buttery, with crisp edges, a cakey exterior and an ever so gooey middle bite. Dotted with plenty of chocolate chips and some candy coated chocolate eggs, like Cadbury or Reese’s.
Chocolate Chip Cookies
If you guys watched my very enthusiastic chocolate chip cookie video, you’ll remember some of these fun facts. Chocolate Chip cookies were invented by Ruth Wakefield in 1938. She was the chef for the Toll House Inn. Some say the cookie was a fortunate accident when Ruth chopped up a Nestle chocolate bar given to her by Andrew Nestle. She then dumped it into her usual mouthwatering butter cookies. While she was expecting the chocolate to completely melt, they retained their form, but became gooey. These cookies were so popular that they remained on the menu. Then they were later added to her cookbook, Toll House
But then Nestle bought her recipe for the whopping price of ONE DOLLAR! And rumor has it that they never even paid her that dollar! Cookie drama!

Cookie Cakes
Do you remember when malls were a cool place to hangout? OMG, I do! It was a high school hangout in my time. And as I wrote that I realized I’m old and that malls are close to a dying breed now! And that when you start saying “my time” you are in trouble. Ouch. Thank goodness I have the ultimate comfort food to eat my troubles away. Another reason to love this Easy Chocolate Chip Cookie Cake!
But cookie cakes were a mall thing that is still popular. And I loved them. These were the pizza like dessert cakes at birthday parties, homeroom snack-time, and sleepover events. These chocolate chip cookie cakes were cool and will always be cool. And I always greedily chose the slice with the most chocolate frosting. If you’re a frequent Ritzy Mom reader, then you wouldn’t be surprised by that!
Now the first cookie cake was said to date back to the 17th century. While no one knows exacty when the chocoalte chip cookie cake was officially invented, there are so many traditions that tie to them. The Great American Cookie Company stakes claim to being “Home of the Original Cookie Cake” when they began selling them in 1977.

EASY Chocolate Chip Cookie Cake
On to baking this Easy Chocolate Chip Cookie Cake. This cookie cake only takes one bowl and 30 minutes from start to finish. Just like Butterscotch Birds Nests, is so much fun to make with your kids. First, preheat your oven to 350 degrees. Lightly coat a 9 inch pie pan with cooking spray. Or please do it my favorite way and use real butter. I live for butter!
Then use your hand mixer to cream softened butter with sugar and brown sugar for a couple of minutes, until fluffy. Add in eggs and vanilla and whir it a minute more. Then add the flour, baking powder, and salt. Yep, all at once. No need to whisk up dry ingredients for this Easy Chocolate Chip Cookie Cake!
Turn mixer to lowest speed and allow the cookie dough to form. Then add in chocolate chips and a handful of chopped mini chocolate eggs of your choosing. As you learned from my, Marshmallow Filled Chocolate Cupcakes, I am partial to Cadbury!
Then spread the cookie dough into the pie pan. Gently press in extra eggs and some chocolate chips. Then bake for about 22-26 minutes. Allow the cookie cake to cool completely before frosting or the frosting will melt.

Chocolate Frosting
This Easy Chocolate cookie cake is finished off with an even easier chocolate frosting. Ensure the cookie cake is completely cool before frosting.
Begin by using a clean hand mixer with a big bowl or use a stand mixer to cream the butter for 30 seconds. Then add the cocoa powder and powdered sugar and gently mix on lowest speed until it comes together. Then turn up to high and let it whip for 2 minutes.
Add in vanilla extract. This is a thick frosting. If you feel it too thick for your preference then add a splash of milk. Fill a piping bag fitted with an open star tip.
Then go around the cake piping even points. Add sprinkles as desired.

- 2 large eggs room temperature
- 1.5 teaspoons vanilla extract
- 1 2/3 cups AP Flour
- 3/4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1/2 cup chopped candy coated chocolate like M&Ms or Mini Chocolate Eggs
Chocolate Frosting
- 6 tablespoons butter
- 1.5 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
